To make salads not only tasty, but also really useful, for their dressing you can prepare lean raw food sauces from cashews, peanuts, walnuts and sunflower seeds. The most delicious of them, reminiscent of mayonnaise, is made from raw cashew nuts. There are many different recipes for its preparation, so everyone can choose the one that suits their taste.
Selection and preparation of ingredients
When you buy cashews, be sure to pay attention to the color and texture, as it should be light, without spots and any inclusions.
If the nuts are moist, sticky or bitter in taste, they should never be eaten to avoid poisoning.
As a rule, nuts are taken raw for raw mayonnaise. Since they are sufficiently hard, they must first be soaked in water to make the texture more malleable.
Vegan Homemade Mayonnaise

- Soak the nuts in water for at least 2 hours to make them soft. Then remove them from the water and dry them.
- Add half the coconut milk to the nuts.
- Mix it all with mustard powder, salt, lemon juice and 1 tbsp. l apple cider vinegar.
- Put the mixture in the refrigerator for 4-6 hours, or overnight, so that they become softer and marinated.
- Add 3 tbsp. Of marinated cashews. vinegar, the balance of coconut milk and 0.5 tbsp. water.
- Grind all the ingredients in a blender and beat to a homogeneous consistency for about 2 minutes, adding a thickener.
Cashew Mayonnaise with Avocado

- Soak the nuts in water for 3 hours to make them soft.
- Drain, dry.
- Dice the avocado.
- Combine all the ingredients, salt and pepper. Add mustard in parts so that it is not too much.
- Beat in a blender for 2-3 minutes until smooth.
- If the sauce is too thick, add a little cold water.
- Garlic is well suited for this sauce, so it can also be added to taste at the end of cooking.
Important! Olive oil should be taken only in cold pressed, if desired, it can be replaced with sunflower.
