Pickled cucumbers can be the highlight of any table in the winter, as the choice of fresh vegetables is not very large. There are many different recipes for preparing this type of snack and each housewife in the arsenal of culinary ideas has her own special recipe for their preparation.
Selection and preparation of ingredients
The first stage of preparation involves the selection of cucumbers.
Since banks will be used for salting, then you should choose greenery with the following characteristics:
- size 10–13 cm to fit well in a small container;
- green, without yellow and dark spots;
- must have black pimples. This is a sign that the cucumber is suitable for pickling, has no voids inside and will be crispy;
- the peel should be thick and dense, such that it is hardly possible to scratch it with a fingernail - this will also allow the salting to be crispy and elastic;
- without bitterness to taste.
The process of preparing cucumbers for salting involves soaking the vegetables in a container with cold water for 3-4 hours.
Kitchen tools
- 3 L can: 1 pc.;
- metal lid for preservation: 1 pc. (can be screwed or traditional for rolling with a key);
- sealing key;
- gauze or nylon cap;
- the spoon;
- pot for boiling brine.
Important! Fermentation and salting is one and the same process, as a result of which fermentation of lactic acid bacteria occurs, it is precisely this that leads to the accumulation of lactic acid, which acts as a preservative. It preserves salting and gives the cucumbers a unique taste.
